from Adele Lipsey McDaniel – Brookhaven, Mississippi
1 Laramie Cattle beef brisket (5-7 lbs.)
1 small, 8 oz. Coca Cola (in glass bottle, if available)
1 small, 6 oz. frozen orange juice concentrate, defrosted
1/8 c. Worcestershire sauce
1/8 c. soy sauce
Salt
Pepper
Mix all ingredients, except salt and pepper, in a small mixing bowl. Salt and pepper
both sides of brisket and place it in a large pan, meat side down. Pour liquid mixture
over meat and marinate in refrigerator for up to 12 hours. Heat oven to 275 degrees.
Before placing meat in oven, baste brisket with marinade liquid. Then add 1 cup of
water to the remaining marinade around the meat. Cover with aluminum foil and
roast for 5 to 6 hours. If not brown, remove cover during last hour.
This recipe is great for church ladies and other busy chefs because it cooks for hours,
unattended, until you are ready to eat.
